Radiator caps have a spring-loaded valve and seal that keeps a small amount of pressure in the cooling system and acts as a relief as pressure rises above normal. By increasing the pressure within the coolant system, you raise the boiling point of the coolant. This prevents cavitation caused by localized boiling as engine temperatures rise and provides a bit more insurance against damage caused by overheating in cars used in more demanding scenarios.
